here’s a couple that i’ve tried…
Low-Fat Chicken Cordon Bleu
1 teaspoon margarine OR butter
4 small skinless, boneless chicken breast halves
1/2 cup fat-free chicken broth
2 tablespoons balsamic vinegar
1/8 teaspoon coarsely ground black pepper
4 thin slices cooked ham
4 thin slices part-skim mozzarella cheese
1 bag prewashed baby spinach
In nonstick 12-inch skillet, melt margarine over medium-high heat until hot. Add chicken and cook 5 minutes. Reduce heat to medium and turn chicken over, cover and cook until chicken is golden brown and just loses its pink color throughout, about 5 minutes longer. Increase heat to medium-high. Stir in broth, vinegar and pepper, cook, uncovered, 1 minute. Remove skillet from heat, top each chicken breast with a slice of ham, then a slice of cheese. Cover skillet until cheese melts, about 3 minutes. Arrange spinach on large platter, top with chicken breasts and drizzle with pan sauce
Chicken Lasagna Recipe
Vegetable cooking spray
1/4 cup chopped onion
2 cloves garlic, minced
2 boneless, skinless chicken breast halves
1/2 teaspoon dried parsley flakes
1/2 teaspoon dried whole oregano
1/2 teaspoon dried whole basil
1/2 teaspoon salt
1/8 teaspoon pepper
1 can no-salt-added tomatoes, undrained and chopped
6 cooked lasagna noodles
1 carton 1% low-fat cottage cheese
1/2 cup shredded part-skim mozzarella cheese
1/3 cup grated Parmesan cheese
1/4 cup shredded 40%-1ess-fat cheddar
cheese
Coat a large skillet with cooking spray and place over medium heat until hot. Add onion and garlic. Saute about 2 minutes. Cut chicken into bite-size pieces.
Add to skillet with parsley, oregano, basil, salt, pepper, and tomatoes. Stir well. Bring to a boil; reduce heat, and simmer, uncovered, 15 minutes. Remove from heat.
Coat a baking dish with cooking spray, place 3 noodles in dish. Layer half each of cottage cheese, mozzarella cheese, chicken mixture, and Parmesan cheese. Repeat layers. Cover and bake at 350 degrees for 25 minutes. Remove cover, and sprinkle with cheddar cheese. Bake an additional 5 minutes.

One of my favorites is Spinach-Stuffed Chicken Breast.
Ingredients:
2 sun dried tomatoes, packed in oil or dried
1/2 cup frozen chopped spinach, thawed
1/2 tsp. lemon zest, grated
1 tsp. unsalted butter, softened
1 Tbs. parsley, minced
2 4 ounce boneless skinless chicken breast halves
1/4 cup seasoned breadcrumbs
If using dried tomatoes, cover with boiling water in a bowl. Let stand 5 minutes and drain. Finely chop tomatoes. Press excess liquid from spinach and combine with tomatoes and remaining ingredients, except chicken and breadcrumbs. Set aside.
Preheat oven to 350°F. Place chicken breasts between two sheets of wax paper and pound lightly with a mallet or other heavy flat object to flatten slightly. Divide spinach mixture into equal portions and spread over each chicken breast. Roll up chicken breasts and secure with toothpicks. Roll in breadcrumbs. Arrange chicken in a shallow pan and bake 35-40 minutes, or until chicken is opaque throughout. Remove toothpicks before serving.
It’s very tasty.
You should check out You on a Diet by Michael Rozien, MD and Mehmet Oz, MD (you may have seen him on Oprah). There’s no cutting out any one food group - you can eat pasta and potatoes, all that good stuff. It just tells you how to manage the way you eat based on your biology, and has lots of great helthy recipes.
If you don’t care about all that crap and just want some good eats, check out. There’s plenty for breakfast, lunch, and dinner there.
